Insulating Tender Plants

What techniques, timing and materials do you like to use to winter over your perennials and young shrubs?? I want to avoid smothering the plants or the encouragement of disease taking hold.

By "tender" plants, I would assume your perrenials or newly planted shrubs. What I like to do is put a couple inches worth of dried leaves over them and then cover the leaves with some evergreen boughs with a small rock on top to hold everything in place.
