I opened up the gear head on a HT101 pole saw to check the bearing on the sprocket shaft. There was "some" grease in the gear box and am wondering if I should clean out the old grease and regrease the gears. What type of grease should I use, and how much? Do I fill the entire cavity or just cover the gears with a good lithium grease?

With all grease remove you add about a 1/2 oz (generous portion) of good bearing grease like EP2 (high temperature bearing grease) and reseal the gearbox oil resistant silicone sealant. Of course Stihl will recommend their products.
