Trying to reinstall the head bolt on my Intek and it started stripping. What can I do now?

Get a tap and die set and rethread the block and replace the bolt is about all you can do.

I have a tap/die set but was thinking there might be a steel insert inside the aluminum hole, no?
I was thinking if there was an insert, I might screw up something worse.

It should have a clear threaded path. Did a bolt possibly break off in there. As far as I know it is just threaded aluminum and no insert.

No, all the original bolts came out clean and intact. So I'm puzzled as to how an aluminum or even an aluminum alloy could strip the end of a steel bolt. Seems like it would be the other way around.

It is a odd stripped bolt by looking at it. Maybe something came apart internally obstructing the thread path?
