It could be a few things.
Give us the engine model. Or mower model number
Should start with 917 I think.

It might be when it heats up your ignition coil is failing. Cutting spark to the engine

You are there stubing your big toe on the mower.
We are here trying to make head or tails out of what you have written
So some more details please.
What do you see, hear, feel smell from the instant you little pinkie touches the key till the moment the engine stops

The motor cuts outs then you can smell gas then quits running. Let if sit and it will start backup run for a hour then stop again.

So that sounds very much like flooding.
Is there some dark smoke that happens just before it stops ?

Remove the carb & clean the float needle & seat.
If one of them is rubber, replace them
with the carb upside down the float should be able to hold back around 10 psi blowing through the fuel inlet.

Have a good look at what is in the bottom of the float bowl.
If there are spongy bits, that is the fuel line giving up the ghost so replace them all.

This happened to me with my 2005 LT1000. It turned out that the choke was not opening, was stuck closed when I moved the choke control level. I drilled a small hole in the plastic housing on top of the engine and added a 25 cent spring to fix the problem.
