Stihl - single or double sided blade hedge trimmer?

Hello guys,
I'm looking at the Stihl hedge trimmers, could someone please tell me what the difference is between 'single sided' blade and 'double sided' blade?
I cut things like pittosporums along path edges eg. creating a wall, and cut other types of trees like 10 feet wide x 10 feet high lemon trees and orange trees into round / oval type shapes.
There probably isn't much over finger thickness to cut, that would be the maximum size and not regularly.
I've put 2 links below to both of the 2 different Stihl hedge trimmers I'm considering buying, would the $350 single sided blade hedge trimmer be appropriate or would the $700 double sided blade one be better? - I really do not know the difference between the single sided blade and double sided blade trimmers, hoping someone could please give an explanation/example!

Funny, looking up the 2 models u list, the single side trimmer has a larger motor...

I have a double side HS75. I just hold it and walk slowly as it trims. I only need to go back and take care of a few missed spots. don't know how u trim but single side you would need to back track a lot if u do back and forth.
Back and forth I had to do a lot with my homelite cuz the slots are a lot smaller and branches don't get clipped.
