Just put everything back together on my LT-1000 and I mean everything! I'll start it up (17.5hp 31c707) engage the blades, cut the entire yard and things sound really good. As soon as I stop the blades I hear the engine sputter a bit and it idles like ****. Any suggestions?

You should have a low speed setting screw coming out at a angle near the top of the bowl..... Not the Idle screw way on top....
If I remember right you have a Nikki carb on there..... Most of the ones I have worked on had a low speed adjustment screw.
Sadly the idle mixture screw doesnt help much. Not sure why it would run great after a cold start and with the blades engaged but then sputter after its warmed up
